Butter is my version of heaven. Organic, grass fed from the happiest cows source-able of course. And let me tell you, I know it costs a metric shit tonne of cash to buy organic butter, but holy christ on a popsicle stick, it’s a completely different entity. Ever see those photos of french people putting slabs of butter on bread and eating it like cheese? Does it kind of make you want to barf a little bit? It probably would. You’d at least gag for sure if you did that with generic, everyday grocery store butter. But the organic stuff? It’s heaven. I get it now. You don't have to microwave the refrigerated, rock-hard slab that you forgot to put in the butter dish last night just so you can spread it on toast. And we all know how that goes anyway.
Generic dairy, you know, the stuff that is affordable, is affordable for a reason. It's crap disguised as food. And koodos to those cunning con artists with the fat pockets - they've done a pretty great job creating dairy dopplegangers. Fake food often tastes better than most things and feels sinfully good at first, I know. Dinner a little lack lustre? Kids won't eat their brussels sprouts? No problem. Just bathe everything in butter and cheese, glorious cheese.
But there's a reason that kind of dairy gives you pimples and sharp abdominal pains followed by rancid poo gas. It's mass produced in factory farms where cows are fed weird ass shit like blood meal, pig bones and genetically modified soybeans (remember, cows eat grass. Grass). They're injected with all sorts of nasty hormones and antibiotics. Why? Well, the hormones ensure that you get more bang for your buck per cow as they'll produce an unusual amount of "product" aka milk, leading to a lovely bundle of tumours, enlarged udders etc etc. And the antibiotics are there to make sure that the cows that are suffering from malformities and growths at the hand of those hormones, and from standing in a stagnant piles of their own sewage, don't die too quick on us. We needs that milk, Precious.
Cow health and morality aside, if you ingest that dairy, you are unquestionably ingesting all the hormones, antibiotics, weird feed and bad voodoo that comes with it. It may look and smell the same as the twice-the-price organic equivalent, but the fact of the matter is, it'll make you sick. Bottom line. Don't eat things that will intrinsically make your body ill. Mass manufactured dairy is bad. Grass fed cows that have access to pasture and have space to be cows, that's better. Still, it's a treat. Don't go running off to adopt the "dairy diet." Besides, if you do, with the price of organic, good dairy, you'd die of poorness real quick.
"But Dairy is bad!" you say. "Butter will make me fat" you whine. WRONG! Well, ok. Eating too much of anything isn't good for anybody. Do your research. All dairy is not created equal.
Eat fat. Yes. Fat. But again, not all fats are created equal. I'm not about to bore you with a bunch of statistics about cholesterol and how we were sold the gospel of a low fat diet in the early 1980's to allegedly combat heart disease while corporations secretly had a plan to gross millions upon millions of dollars selling us a new niche market of low-fat food products loaded with sugar and preservatives that actually made us more sad, more docile and more fat. And I won't get deep into the story about how farmers sold their by-product from canola processing to mass market an oil-based butter alternative called margarine which completely undermined the value of quality fats and brainwashed the public to buy gross, spreadable plastic oil stuff in order to make all sorts of asshats rich while we got more fat, undernourished and sick. Not to mention disconnected from what food actually is (you know most of it grows in the ground, right? See Louis C.K. He's a scientist). So, I'm sure you've heard it. Blah blah blah, omegas, blah blah, unsaturated fats, yadda yadda triglycerides yadda. Unlike Louis C.K., I'm not a scientist. But I am pretty smart. And I can say with confidence that eating whole fats from nuts, fruits and yes, good dairy (butterrrrr), is essential for the optimal functioning of your body. Your heart! Your skin! Your mind, man! It's science! Don't remain indoctrinated by old corporate money making schemes that inherently compromise your health and well being.
Eat vegetables. Eat fruits. Drink water. Eat whole grains. Eat fats. And indulge in some butter and cheese once in a while, eh? It’s a treat, like Swiss chocolate or 11%, heavy, honeyed, greek yogurt. It’s pricey, but it’s a sensory experience. Don't kill your lust for life by trying to be a "low fat" nazi. Enjoy your life. Eat butter sometimes when you can get it from a trusted source and be in love with it. It's all about balance, brah.
